After consistently running afoul of the Gavi DOCG for his raw and unadorned expressions of Cortese, in 2015 Stefano withdrew this wine from the classification, instead choosing to label it as Ivag (Gavi backwards), an indication of his thoughts on the consorzio's conventionally-leaning stipulations. Pulled from 3 parcels of Cortese spread throughout the property and aged for a year in large botti, the Ivag is golden, fleshy, electric and raw: salted meyer lemon, citrus oil, sea salt, little white blossoms. In other words, this is Gavi in all its unadorned and punch-drunk glory.
