Champagne André Beaufort is a pioneer of organic and biodynamic winemaking in the Champagne region, split between holdings in Ambonnay (Grand Cru) and Polisy (in the Aube). Founded by Jacques Beaufort, the estate has practiced organic agriculture since 1970 (before the advent of official French organics legislation in 1981); \u003c\/span\u003e\u003cspan\u003eas of 2018, the estate is run by his sons Constant and Réol Beaufort. Beaufort's wines are not the austere, acid-driven monsters that so many clamored-about bottles seem to be today; rather, they are immediately pleasurable and fantastically fresh expressions of the Aube from one of the only individuals using native yeasts for both their Vin Clair and secondary fermentations.
