Harvested typically before other estate fruit. 

After harvesting, grapes sit in wooden boxes or on rush mats; ultimately the dried grapes are pressed in mid-December. A blend of 40% Cabernet Sauvignon, 40% Cabernet Franc, 20% Merlot. These varieties are macerated on the skins for 20 days on indigenous yeasts. Fermentation lasts around 50 days. Additional aging in French barrels for two to three years and racked into Slavonian oak barrels for four years.
