They’re gently pressed, then aged several months in steel vats until racking and bottling, where the wine undergoes a second fermentation in-bottle on the lees. There is no chemical intervention at any stage of the winemaking process, with everything bottled unfined, unfiltered, no added SO2. Soft as a fresh springtime Alpine breeze, you could be forgiven for forgetting that this is in fact an alcoholic beverage. Part creamsicle, part pink lemonade, part alpine fizz bomb!
