100% sparkling Catarratto, from the higher-reaching, limestone-rich vineyard of Giardinazzo - this is some killer lo-fi fizz! First fermentation takes place mainly in steel with a part in French oak, lending a touch of toast to the final wines; secondary fermentation is followed by just shy of two years developing complexity on lees. No dosage here, with Alessandro preferring a blank slate upon which to express the energy of his little corner of Sicily. Bitter almonds, aromatic herbs, and peaches. On the palate, a super fine mouthful carries waves of wild fennel, bee pollen and salt into a bone dry pucker.
