The Cabernet grapes are partially dried on straw matting after picking, whereas the Corvina and Corvinone are freshly pressed. While 'Primofiore' doesn’t meet the lofty aging standards of the estate's 'Valpolicella', it would be hard to argue that this didn’t exceed expectations nonetheless – just think of it as an opportunity to drink a younger Quintarelli, one not made with the \u003c\/span\u003e\u003cem\u003eripasso\u003c\/em\u003e\u003cspan color=\"#000000\" style=\"color: #000000;\"\u003e technique. Wonderfully fresh and vibrant, showing rosy florals, wild strawberries, green peppercorns and a touch of sweet spice. Silky in texture, with undertones of savory herbs upfront, before further evolving to display tart wild berries with a subtle twang of sour citrus, which frames the experience nicely. Once picked, grapes are dried for around two months before pressing. After racking what will become Amarone off its skins, the Valpolicella is added to the marc (the Amarone skins left behind). This is the \u003cem\u003eripasso\u003c\/em\u003e process, which bolsters the wine’s complexity, color, and structure. A second alcoholic fermentation starts naturally, thanks to the residual sugar in the Amarone skins and the cellar’s native yeast.
