The vines, around 40 years old, grow on gray and white marl soils cultivated biodynamically. These are old vines with low yields, grown biodynmically on gray and white marl soils, harvested by hand slightly under-ripe to counterbalance the richness of the grape variety. It undergoes carbonic maceration without punching down for 4 weeks, on indigenous yeasts, then ages for at least a year in 900 liter sandstone amphoras, which enhances the tension and minerality of the wine.
